Vegetarian Basil Chili with Kale
I usually reserve this meal for nights that I'm strapped for time. It's loaded with nutrition, super hardy, yet easy to prepare and ready within 30 minutes. OR throw everything into a crockpot in the afternoon and let sit for a few hours on medium low heat.

2 cans black beans 2 cans red kidney beans 2 cans garbanzo beans 1/2 jar seasoned tomato sauce (I like the 365 Whole Foods Italian Basil or Classic) 1 cup vegetable broth (or add more tomato sauce) 1 chopped green bell pepper 1 chopped red bell pepper 1 small yellow onion, chopped 2 tbs fresh basil, chopped 3 leaves kale, de-stemmed and chopped 2 tsp chili powder
Add all ingredients to a large pot or crockpot. Simmer over medium heat for about 30 minutes. Enjoy with butternut squash quesadillas or chips and guacamole.
