Vanilla Berry Chia Pudding

Our country is far from perfect, but on the 4th of July, it feels good to celebrate all that is right about it. If you're heading to a barbecue or some other type of gluttonous orgy, it's good to plan ahead if you want to stay the course. Bringing something to eat is always helpful. You could tote one of these salads or one of these patriotic picks. This way you know there will be something you can nosh on. Fill up on those first...sample the other stuff after.

Oh, and never hang out by the food. When you do, your hands seem to start thinking for themselves and move food to your mouth without you even realizing it. You know this is true.

And if you can drink WATER and forgo the sangria, you will save yourself a whole bunch of extra calories. Just sayin'.

Vanilla Berry Chia Pudding

Ingredients

1 cup vanilla yogurt (So Delicious Coconut Milk yogurt has no dairy or carrageenan; Siggi's is low in sugar)

1/2 c coconut milk

2 tbsp chia seeds

juice of half a lemon

Organic blueberries and strawberries, washed

Directions

Mix coconut milk with yogurt until smooth. Stir in chia seeds and lemon juice until thoroughly blended. Place into fridge for 1 hour. Remove and layer with chopped strawberries and blueberries...or just mix all together. Serves 2-4, depending on serving size. (Note: For a party, try using shot glasses for tiny parfaits.)
