This morning I went out on my bike for the first time in a year. It was just as amazing as I knew it would be. I'm fortunate to live near a whole lot of back country roads. One of them opens up to a reservoir, where I was alone with the birds, the crickets, and the occasional fish that broke the surface of the water. So worth waking up early for.
Before I headed out on my 20-mile trek, I fueled up with this muesli. It was the first time I've made it, and did so special for a client whose family needs nut-free recipes. I loved that this was ready to eat within minutes!
2 cups rolled oats 1/2 cup shredded coconut 1/2 cup chopped dates 1/3 cup pumpkin seeds (pepitas) 1/4 cup chia seeds almond milk (or rice milk) to cover Directions
Mix together in a pot (that has a cover) and cover with almond milk to about a half inch above the mixture. Soak in fridge overnight.
The next morning, serve and add chopped peaches, maple syrup to taste preference, and cinnamon. (You can add chopped dates at this time if you don't like them soaked.)
