Nut Butter Chocolate Chip Truffles
It's hard to live in our culture, and not be exposed- or have to whip up- some sort of sweet treat at some point. So if we're going to consume sugar once in a while, it should at least be in a form that provides some nutrient benefit that refined sugar does not.
These truffles offer that through the protective benefits of honey and the antioxidants found in dark chocolate.
Combined with the nutrient quality of almonds and sunflower seeds means that while you may not have a health food, per se, you have a snack that you can feel good about serving to your kiddos.
Also cool is that these have been taste-tested with taste bud-challenged kids and adults, and have passed with flying colors.
1/2 cup almond butter (or peanut butter) 1/2 cup sun butter 1/2 cup honey 1 cup crushed organic corn flakes or crispy rice cereal 1/4 cup ground nuts 1/2 cup unsweetened coconut
Mix all ingredients in a medium bowl. Roll into balls. Refrigerate.
Now, you canSTOP here, drizzle melted dark chocolate on top, roll them in some shredded coconut, OR do what my friend Julie did in the photo above and roll them in dark chocolate chips, which are highly appealing to little ones.
Place in freezer for about 30 minutes and serve chilled. Watch disappear.
