Healthy Nachos? Yes!
Sure, you can make nachos like these...
But these are not likely to leave you feeling very well...
and why put all that highly processed and chemical-laden junk into your body when there are healthier alternatives?
Except for a little chopping, these nachos are easy, and have received rave reviews from both women and picky husbands.
Be sure to use organic corn chips, as most corn grown in this country is genetically-modified, which is being linked to the growing number of food allergies in our children, though scientists are not sure why.
2 cups water
1/4 cup raw cashews
one red bell pepper, lightly roasted or sauteed
1 cup nutritional yeast flakes
2 tbs cornstarch
1 tbs fresh lemon juice
1 tsp salt, or to taste
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin
heaping 1 15 oz. can or box black beans, rinsed
chopped green onions, tomatoes, and greens
Combine all ingredients except beans and vegetables and blend until completely smooth. Transfer to a medium saucepan and whisk constantly over medium-low heat until thickened, about 7-8 minutes. Add black beans, stir, and pour over corn chips. Top with vegetable garnish. Serve with guacamole.
