I need to send props to one of my clients for this recipe. I tweaked a little to boost the nutrition factor, but these are super tasty! Looking forward to sending my son to school with these tomorrow. If he were in a nut-free zone, I'd leave out the walnuts and sub pumpkin seeds instead. These bars are not only packed with nutrition, the soluble fiber in the oats leaves you feeling full and satisfied for a while!
1 large ripe banana 3/4 cup date sugar 1 tsp vanilla 1 1/2 cups rolled oats 1/2 cup flour (coconut or almond flour works well) 3/4 cup chocolate chips 3/4 cup walnuts, chopped 1/2 cup raisins
With a mixer, cream banana, date sugar, and vanilla. Add the rest of the ingredients and mix with hands. Press into 8x8 baking pan and bake at 350 F for 25 minutes. Mix will harden as it cools. Cut into bars.
