Gluten-Free Chocolate Cupcakes

Had a tough crowd to please yesterday in the form of four active boys, and have been looking for a GOOD gluten-free, dairy-free cupcake recipe. If you bake without gluten, you know it can be tricky. Many recipes come out dry or crumbly, or harden the next day.

Are these perfect in terms of nutrients? No. The xanthan gum is from corn and likely genetically-modified. The vegan mayonnaise (I used the one made with grapeseed oil) is...well...vegan mayonnaise. But we do what we can (like uses coconut palm sugar instead of refined sugar) and don't stress about the rest, and oh my goodness, these are sooo delicious! Will definitely make again and they'll likely be wearing a few birthday candles when my little guy celebrates this summer.

Almond milk, dates, cacao, and vanilla. That's it! Easy, nutritious, delicious.

Get your kids to help in the kitchen. They especially love the frosting part!

All seemed very satisfied. One gluten-free little guy said these were the best cupcakes he'd ever tasted!
