This dessert truly holds a lot of nutrition and is satisfying, even in small amounts.

Fresh Tomato Mango Salsa

When life hands you tomatoes, you ask all your friends what the heck to do with them. After making enough tomato sauce to feed a small cafeteria filled with hungry little mouths, I've had to move on. Fresh salsa is easy and you get to practice mindfulness while chopping. Providing your child is not directly across from you singing a Christmas carol for the 23rd time and now you've got chestnuts and roasting fires on your brain that you so do not want to be thinking about on the first day of September.

But otherwise, enjoy the quiet.

Ingredients

3-4 cups of fresh tomatoes, chopped 1/2 cup fresh or frozen corn (drained) 1/4 cup red onion, chopped fine 1/2 cup fresh or frozen mango, chopped and drained 1/2 cup green bell pepper, chopped fine 1/3 cup chopped cilantro Juice of one lime

Mix all ingredients in a large bowl, including the lime juice. Season with sea salt and ground chili pepper to your liking. Allow to marinate in fridge for 30 minutes to an hour. Serve with favorite chips or in romaine lettuce wraps.
