Easy Snack- Chocolate Bark
If you're like me, you crave a little sweet now and then. Eating healthfully doesn't mean you can't satisfy that desire. It's all in how it's done. This snack is easy to prepare. Make it the night before if you want to send it to school with your child. Look for high-quality chocolate that's at least 50% cacao to get the nutritional benefits- iron, magnesium, antioxidants- that chocolate offers. Hazelnuts are an excellent source of Vitamin A- one of the few nuts that is- and the B vitamins. The deep red color of cranberries means they are loaded with antioxidants.
9-12 ounces of dark, quality chocolate (or chips) 1 cup hazelnuts, chopped 1 cup dried cranberries
In a double boiler, melt the chocolate. While chocolate is melting, spread chopped nuts and cranberries onto prepared baking sheet. Pour melted chocolate over the spread, and mix until everything is covered. Spread flat. Refrigerate until firm (about a half hour).
