Creamy, Dairy-Free Strawberry Ice Cream
Sweet like sorbet, yet creamy like ice cream, this treat is so nutritious, you could serve it for breakfast!
Although the arrowroot powder is not necessary, it will keep the ice cream from forming ice crystals in the freezer.
Tasty served right away or after being stored in the freezer.
1/2 ripe avocado 1 heaping cup frozen strawberries (about a dozen) 2 tbs plain coconut milk yogurt 2 tbs pure maple syrup or honey 1/2 tsp arrowroot powder
Cut strawberries in half. Combine all ingredients in food processor and process until smooth. Will take a few minutes. Add a bit more syrup, to taste, if necessary. Serve right away, or store in the freezer for up to four days.
