Creamy and Hardy Cauliflower Soup
Cauliflower is an excellent source of Vitamin C, but like its cousins in the cruciferous veggie family (think Brussels sprouts, cabbage, kale), it is a super de-toxifier. Our bodies are being exposed to toxins every day, so it's important to eat foods that support our adrenal glands and other parts of our detox system. By doing so, we keep our cells healthy and less susceptible to disease.

1 small-medium head of cauliflower, chopped 1/3 cup cashews (unroasted, unsalted) 2 cups low-sodium vegetable broth 1 tbs nutritional yeast 1 tsp sea salt 1/2 tsp ground black pepper 1 1/2 tsp rosemary, crushed 2 carrots, peeled and chopped
Boil cauliflower until slightly crisp. (Do not over-boil or you lose valuable nutrients.) While cauliflower is on the stove, blend cashews, broth, nutritional yeast, and spices. Add cooked cauliflower and blend again. Boil carrots until slightly crisp and add to soup. Serve with whole grain bread. Yummy!
