Comfort Food- Black Bean Soup
A rainy spring day makes the perfect soup day. This soup was not only tasty, it was ready in about 20 minutes. Black beans are particularly supportive of a healthy digestive tract, especially in the colon. Recent research has shown that black beans, more than any other legume, help to keep the colon functioning properly, reducing the risk for colon cancer.
Feel free to spice this up more if you like to tear up when you eat!
2 15 oz. cans black beans, drained 1 cup vegetable broth 1 cup medium salsa 1/2 tsp. chili powder 1/2 tsp. coriander 1 carrot, peeled and chopped 1/2 onion, chopped Sea salt to taste
Mash one can of drained beans. In a large pot on low heat, add mashed beans to the other can of beans, broth, salsa, and seasonings. While that is heating, saute carrots and onion on top of stove till just tender. Process in blender and add to bean mixture. Season with sea salt to taste. Serve with sprig of cilantro, if desired.
