Chocolate Power Truffles

I am constantly making these snacks because they are SO easy and you can fit lots of good stuff into them. They almost never look or taste the same because I use whatever happens to be in my fridge at the time.You can do the same. You just need something squishy- like any kind of dried fruit (also used sticky in this recipe), and something dry- nuts and seeds. Then sprinkle with cinnamon, cacao, coconut, whatever you like!

But I know some of you like recipes, so here is this one. The measurements are approximates. You want to be able to squish and roll your truffles together, so if there is too much dry, just add a bit more squish.

Chocolate Power Truffles

1 tbsp. sunflower seeds 1 tbsp. hemp seeds 2 tbsp. peanuts (or favorite nut) 1/4 c raisins (dates are milder) 1 tbsp. almond butter 1 heaping tbsp. cacao powder (or high quality cocoa ok) 2 tsp plant-based protein powder (optional) squeeze of lemon juice

Blend all together in food processor and roll into truffle balls. Sprinkle with more cacao powder, cinnamon, and/or shredded coconut for added nutrients. Just a couple are very satisfying and will definitely power you up for hours!
