Avocado White-Bean Spread
Super easy and loaded with nutrition, this spread will definitely be a regular part of my lunch rotation!

Cannellini beans are an excellent source of fiber and iron, but they're also known for preventing headaches.
The beans are a good source of molybdenum, a trace mineral that helps the body produce detoxifying enzymes to ward off sulfites (found in baked goods and wines)- which are known to cause headaches in people sensitive to sulfites.
One 15 oz. can cannellini beans, rinsed One ripe avocado Juice from a 1/4 lemon 1 tsp garlic powder 1/2 tsp ground black pepper three chopped scallions
Directions Add all ingredients except scallions to a food processor and process until smooth. Adjust seasonings for taste. Transfer to bowl and stir in half the scallions. Sprinkle the rest on top before serving.
