Almond "Feta Cheese"
I'm not one who tends to think ahead of time when it comes to cooking, so if a recipe requires me to perform a step or two the day before, it usually ain't happening.So I was delightfully surprised when I tweaked this recipe to knock out a couple advance steps, and it still turned out great!
This cheese can be served warm, as a spread, or cooled and crumbly, like a feta.
1 cup whole blanched almonds 1/4 cup water 1/4 cup lemon juice 3 tbs plus 1/4 cup olive oil, divided 1 clove garlic, peeled 1 1/4 tsp sea salt 1 tsp. thyme 1 tsp. rosemary (crumbled in btw fingers)
1. Puree almonds, lemon juice, 3 tbs olive oil, garlic, salt, and 1/2 cup cold water in food processor for a few minutes, until very smooth and creamy.
2. Use a spatula to slide mixture into small baking pan. (I used two small mini pie plates.)
3. Bake in toaster oven at 200 degrees for about 25 minutes, or until cheese turns slightly brown on top. At this point you can choose to cool, then chill, or prepare seasoning to serve warm.
4. Seasoning: Combine remaining 1/4 cup oil and seasonings and drizzle over cheese just before serving.
