Sugar-free Mint Chocolate Chip Nice Cream

Usually when you find sugar-free recipes, you discover they are not actually sugar-free. They use honey, stevia, or some other sugar substitute. One could argue this recipe is not sugar-free either, because of the fructose in the bananas, and that is true. But when running a sugar cleanse and many in your group are dying for something sweet, this totally satisfies.

Why are there a hundred people sugar-cleansing with me this week? 

Maybe it was my desperate plea for people to join my tribe. I always do better with these things when I have company.

Or maybe it was because we are all sharing the same cravings for sweets in the afternoon and after meals, or the skin breakouts, or the bloat that all accompany a body with too much sugar.

We've all been hearing how the American Heart Association recommends we get no more than 6 tsp of added sugar a day, yet most of us are consuming more than 30 tsp a day.

Say what?

That's why I am SO excited about this dessert. Not only is it easy, it can provide an alternative to the summer ice cream trips- those little sugar events that quickly evolve into crack trips where you beg your children to go for ice cream because, you know, it's really for them.

Honest, as you move your body away from sugar, you will find that desserts like these become more satisfying. 

This dessert truly holds a lot of nutrition and is satisfying, even in small amounts. The banana provides the sweet, the coconut fat fills you up, and the peppermint leaves a satisfying clean taste in your mouth. It's a win-win-win!

Sugar-Free Mint Chocolate Chip Ice Cream

Serves 2

2 medium bananas, peeled and chopped, frozen

2 tbsp coconut fat (skim from top of canned coconut milk)

1 tbsp unsweetened coconut milk (or try the water from the can)

1/4 tsp peppermint extract

1 tbsp unsweeted cacao nibs*


Blend bananas, fat, and milk until smooth but not melted. Place into mixing bowl and mix in peppermint extract and nibs. Serve immediately and enjoy!
