Molasses Ginger Cookies

My original intent for these cookies was to create a snap, a crunchy cookie. These are soft and melt in your mouth. They’d go well with a tall glass of coconut milk.

What makes these cookies even better is that they have nutritional benefits. Molasses is a great source of B vitamins and ginger is anti-inflammatory. Even the maple syrup has iron and magnesium.

Plus, they’re pretty easy to make in ready in minutes.

Molasses Ginger Cookies

Makes 10-12 cookies.

2 1/2 c gluten-free flour (My favorite brand is Cup4Cup)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp powdered ginger
1/2 c real maple syrup
1/2 c molasses
1/2 c organic canola oil
2 tbsp finely grated fresh ginger

If clumpy, sift flour into large bowl and add baking powder, baking soda, salt, and powdered ginger. In a separate bowl, mix maple syrup, molasses, canola oil, and grated ginger. Add the wet ingredients to the dry and stir until just mixed.

Drop by the tablespoon onto a cookie sheet, leaving space between as the cookies will spread. Bake at 350 degrees for about 12 minutes.
