Dairy-Free Creamy Dijon Dressing

I have this habit of buying cauliflower because it's such a power food and then I do nothing with it. 

But now I've created something I can do with it!

This recipe takes about 30 minutes to make but it's a worthy investment because it means you have a powerful, immune-boosting dressing ALL week that tastes great at the same time! You don't get that in a bottle.

DAIRY-FREE CREAMY DIJON DRESSING

2 c steamed cauliflower

1/2 c raw cashews

3 tbsp dijon mustard

2 tbsp local honey

2 tbsp lemon juice (juice of one lemon)

1/2 tsp sea salt 

1 and 1/2 c water

Pour water into high-speed blender or food processer and then add remaining ingredients. Blend on high until smooth. Store in covered glass jar for up to 7 days.
