Healthy Nachos? Yes!
When I first served these nachos to the ladies at a wellness event, I cautioned that they should remove any preconceived nacho notions from their minds and be open to new tastes.
All that went out the window after all the oohs and ahhs these nachos received. Even extremely picky husband wolfed them down. Want nachos you can feel good about eating? Give these a try!
Feel free to load on greens, tomatoes, scallions, salsa, or whatever you prefer as chip-toppers! Be sure to use organic corn chips, as most corn grown in this country is genetically-modified, which is being linked to the growing number of food allergies in our children.
Ingredients
2 cups water
1/4 cup raw cashews
one 4 oz. jar pimentos, drained
1 cup nutritional yeast flakes
2 tbs cornstarch
1 tbs fresh lemon juice
1 tsp salt, or to taste
1 tsp onion powder
1/2 garlic powder
1/2 tsp cumin, heaping
1 15 oz. can black beans, rinsed
Directions
Combine all ingredients except beans and blend until completely smooth. Transfer to a medium saucepan and whisk constantly over medium-low heat until thickened, about 7-8 minutes. Add can of black beans, stir, and pour over corn chips.












These were awesome and my husband who is a junk food eater during the “big games” will devour these “nachos” in a blink of an eye.

Great, Stacy! I don’t usually soak them, only because I don’t think far enough ahead. But soaking will mean you’ll use fewer cashews- as they absorb some of the water- and the nutrients will be more bio-available for your body, so great idea! Let me know what you think.
