GF Apple-Spice Muffins

I used my Vitamix blender to make these, which made a smooth batter. The muffins came out smoothly rounded as well. Using the traditional mixing bowl method won’t compromise the taste, and the muffins will have a more muffin-y look.

I like these because they don’t use refined sugars and they have the perfect amount of sweetness for me. I had to stop my son after three or he’d have devoured the whole batch.

Makes about 15 muffins.

Ingredients

1/2 cup canola oil
3/4 cup liquid sweetener
(I used a combination of agave nectar and maple syrup)
1 1/2 cups unsweetened apple sauce
1 tsp pure vanilla extract
1 tsp ground cinnamon
3 cups gluten-free all-purpose flour (like Bob’s)
1 1/2 tsp. baking soda
1/2 tsp. sea salt
2 cups Granny Smith apples, diced

Directions

1. Combine oil and sweetener in blender and mix for 20 seconds.

2. Add applesauce, vanilla, cinnamon. Blend again for 20 seconds.

3. In bowl, combine flour, baking soda, and salt.

4. Add wet ingredients to dry and mix until just combined. Fold in apples.

5. Spray muffin tin and fill. Bake at 350 degrees for 25 minutes, or until muffins are golden brown.
